Winter Herring. Aged 3+ years. Mostly male herring, which makes for a different flavour profile from our Roe Herring products. Winter herring batches have a much more pronounced "fish" flavour. The longer aging makes for a mellower, gentler but still complex taste.
Limited to 2 barrels.
